Responsibility
- Assist the Executive Chef in planning, coordinating, and executing daily kitchen operations to ensure consistency and excellence in all dishes.
- Supervise and mentor kitchen staff, including line cooks and prep cooks, to maintain high standards of food preparation and presentation.
- Oversee inventory management, including ordering supplies, tracking stock levels, and minimizing waste while adhering to budget constraints.
- Enforce strict hygiene and food safety protocols in compliance with local and international standards.
- Develop and refine recipes, menus, and specials in collaboration with the culinary team to align with seasonal ingredients and guest preferences.
- Monitor food costs and portion control to optimize profitability without compromising quality.
- Step in as Acting Executive Chef in their absence, ensuring seamless leadership and operational continuity.
- Foster a positive, high-performance work environment through effective communication, teamwork, and conflict resolution.
Qualifications
- Minimum of 3–5 years of experience as a Sous Chef or in a similar leadership role within a high-volume, fine-dining, or luxury hospitality setting.
- Culinary degree or certification from a recognized institution (e.g., Le Cordon Bleu, CIA) is a strong advantage.
- Proven ability to manage a diverse team in a fast-paced kitchen, with exceptional organizational and time-management skills.
- Deep knowledge of international cuisines, cooking techniques, and food safety regulations (HACCP certification preferred).
- Strong problem-solving abilities and the capacity to make quick, effective decisions under pressure.
- Fluency in English; additional language skills (e.g., Indonesian, French) are a plus.
- Creative mindset with a passion for innovation in menu development and culinary trends.
