Responsibility
- Lead and oversee pastry operations in high-volume, luxury hospitality settings, ensuring consistency, quality, and creativity in all dessert offerings.
- Develop and execute seasonal pastry menus, incorporating local Balinese ingredients and global culinary trends.
- Manage inventory, cost control, and procurement of pastry ingredients, minimizing waste while maintaining premium standards.
- Train, mentor, and supervise junior pastry chefs and kitchen staff, fostering a collaborative and high-performance team culture.
- Collaborate with executive chefs and F&B teams to align pastry offerings with overall menu concepts and guest expectations.
- Ensure compliance with food safety, hygiene, and sanitation regulations in all pastry production areas.
- Innovate and refine signature desserts, plated presentations, and specialty items for Ă la carte, banquets, and events.
- Monitor guest feedback and industry trends to continuously elevate the pastry programâs reputation and guest satisfaction.
Qualifications
- Minimum 5+ years of professional pastry experience, with at least 2 years in a Sous Chef or leadership role in luxury hotels, resorts, or fine-dining establishments.
- Diploma or degree in Pastry Arts, Culinary Arts, or equivalent from a recognized institution.
- Proven expertise in plated desserts, chocolate work, sugar art, and modern pastry techniques.
- Strong knowledge of food costing, inventory management, and kitchen workflow optimization.
- Experience working in international or multicultural kitchen environments, with adaptability to diverse culinary styles.
- Certification in food safety and hygiene (e.g., HACCP, ServSafe) is highly desirable.
- Exceptional leadership skills with the ability to motivate teams, resolve conflicts, and drive operational excellence.
