Responsibility

  • Lead and mentor a team of pastry chefs and assistants, fostering a culture of creativity, precision, and teamwork.
  • Develop and refine seasonal dessert menus, incorporating local flavors and high-quality ingredients.
  • Ensure consistency in taste, presentation, and quality across all pastry offerings, from plated desserts to bread and viennoiserie.
  • Oversee inventory management, including ordering, storage, and cost control, to minimize waste and optimize budget.
  • Collaborate with the culinary and F&B teams to integrate pastries into broader menu concepts and special events.
  • Maintain strict adherence to food safety, hygiene, and workplace health standards.
  • Innovate with new techniques, trends, and recipes to keep the pastry program fresh and competitive.
  • Train and develop junior staff, conducting regular performance reviews and skill-building sessions.

Qualifications

  • Minimum of 5 years of experience in a pastry kitchen, with at least 2 years in a leadership role.
  • Formal culinary or pastry education from a recognized institution (e.g., diploma, certification, or apprenticeship).
  • Proven expertise in classical and contemporary pastry techniques, including chocolate work, sugar art, and bread-making.
  • Strong leadership skills with a track record of managing and inspiring teams in high-volume environments.
  • Creative flair and a passion for experimenting with flavors, textures, and presentations.
  • Excellent organizational and time-management skills to handle multiple priorities in a fast-paced setting.
  • Knowledge of local Indonesian ingredients and willingness to incorporate them into modern pastry concepts.
  • Fluency in English; proficiency in Bahasa Indonesia is a plus.
