Responsibility

  • Lead the daily production of artisan breads, pastries, cakes, and other baked goods, ensuring consistency and high quality.
  • Develop and refine recipes to align with seasonal trends, customer preferences, and bakery standards.
  • Train, mentor, and supervise junior bakers and kitchen staff to maintain operational excellence.
  • Manage inventory of baking ingredients, place orders, and monitor stock levels to minimize waste.
  • Oversee equipment maintenance and kitchen hygiene to comply with food safety and health regulations.
  • Collaborate with the management team to plan menus, special promotions, and custom orders.
  • Innovate with new baking techniques, flavors, and presentations to enhance the bakery’s offerings.
  • Ensure timely preparation and delivery of baked goods for café service, wholesale, and events.

Qualifications

  • Minimum 5 years of professional baking experience, with at least 2 years in a senior or lead role.
  • Proven expertise in artisan bread-making (e.g., sourdough, baguettes) and pastry techniques (e.g., laminated dough, custards).
  • Strong knowledge of food safety, HACCP, and sanitation standards in a commercial kitchen.
  • Creative mindset with the ability to develop and adapt recipes to local tastes and ingredients.
  • Excellent leadership and team management skills, with a track record of training staff.
  • Ability to work early mornings, weekends, and holidays as required in a bakery setting.
  • Physical stamina to lift heavy ingredients (up to 25 kg) and stand for extended periods.
  • Fluency in English; proficiency in Indonesian is a plus.
