Responsibility

  • Oversee daily kitchen operations, ensuring smooth workflow and adherence to food safety and hygiene standards (HACCP, ISO 22000).
  • Lead, train, and mentor kitchen staff to maintain high performance, teamwork, and a positive work culture.
  • Monitor inventory levels, place orders with suppliers, and manage cost control to optimize profitability.
  • Collaborate with the head chef to develop and refine menus, ensuring consistency in taste, presentation, and portion control.
  • Conduct regular quality checks on ingredients and finished dishes to uphold brand standards.
  • Coordinate with front-of-house teams to ensure seamless service and guest satisfaction.
  • Implement and enforce SOPs (Standard Operating Procedures) for food preparation, storage, and waste management.
  • Assist in planning and executing special events, promotions, or private dining experiences.

Qualifications

  • Minimum 5 years of experience in a supervisory or managerial role within a high-volume kitchen (fine dining, hotel, or resort preferred).
  • Proven expertise in food safety regulations and certification in HACCP or equivalent.
  • Strong leadership and communication skills to manage a diverse team in a multicultural environment.
  • Ability to work under pressure, multitask, and adapt to changing priorities in a fast-paced setting.
  • Proficiency in inventory management, cost control, and vendor negotiations.
  • Creative mindset with a passion for culinary innovation and trend awareness.
  • Fluency in English (additional languages, such as Indonesian or Mandarin, are a plus).
  • Flexibility to work evenings, weekends, and holidays as required by the hospitality industry.
