Responsibility
- Prepare, cut, and process high-quality meats according to standardized recipes and hygiene protocols.
- Assist in the butchery of whole animals, including portioning, trimming, and packaging for kitchen use.
- Collaborate with chefs to develop and execute daily specials and menu items featuring premium meats.
- Maintain cleanliness and organization in the butchery and prep areas, adhering to food safety regulations.
- Monitor inventory levels of meat products and coordinate with suppliers to ensure fresh stock.
- Operate and maintain butchery equipment, including grinders, slicers, and saws, with safety and efficiency.
- Train and guide junior staff on proper butchery techniques and kitchen best practices.
- Contribute to cost control by minimizing waste and optimizing meat usage in dishes.
Qualifications
- Minimum 2+ years of experience as a Cook, Butcher, or Meat Specialist in a professional kitchen or butchery.
- Proven knowledge of meat cuts, aging processes, and food safety standards (HACCP preferred).
- Ability to work in a fast-paced environment with a focus on precision and efficiency.
- Strong physical stamina to handle repetitive tasks, lifting, and standing for extended periods.
- Excellent knife skills and familiarity with butchery tools and equipment.
- Basic understanding of English or Indonesian to follow instructions and communicate with the team.
