Responsibility
- Oversee daily kitchen operations, ensuring smooth workflow, efficiency, and adherence to food safety and hygiene standards.
- Lead, mentor, and motivate a team of chefs and kitchen staff to maintain high performance and service excellence.
- Develop and implement standard operating procedures (SOPs) for kitchen processes, including food preparation, cooking, and plating.
- Monitor inventory levels, manage supplier relationships, and ensure cost-effective procurement of high-quality ingredients.
- Collaborate with the culinary and management teams to design seasonal menus that align with brand identity and customer preferences.
- Conduct regular quality checks to ensure consistency in taste, presentation, and portion control across all dishes.
- Handle customer feedback and resolve kitchen-related issues promptly to enhance guest satisfaction.
- Stay updated on industry trends, innovative cooking techniques, and sustainable practices to drive continuous improvement.
Qualifications
- Minimum 5 years of experience in a managerial role within a high-volume kitchen or fine dining establishment.
- Proven track record of leading teams, optimizing kitchen operations, and maintaining exceptional food quality and safety standards.
- Strong knowledge of HACCP, food safety regulations, and best practices in culinary hygiene.
- Excellent leadership, communication, and problem-solving skills with the ability to work under pressure.
- Creative mindset with a passion for culinary innovation and a deep understanding of global and local cuisine trends.
- Proficiency in inventory management, cost control, and budgeting to ensure profitability.
- Fluency in English; additional language skills (e.g., Indonesian, Mandarin) are a plus.
