Responsibility
- Prepare and present high-quality sushi, sashimi, nigiri, and maki rolls using traditional and modern techniques.
- Ensure all ingredients, including fish, rice, and vegetables, meet the highest standards of freshness and quality.
- Maintain a clean, organized, and efficient sushi station in compliance with food safety and hygiene regulations.
- Collaborate with the culinary team to develop seasonal menus and special dishes that align with guest preferences.
- Train and mentor junior chefs and kitchen staff on sushi preparation, knife skills, and Japanese culinary traditions.
- Monitor inventory levels and assist in ordering supplies to maintain optimal stock.
- Engage with guests to provide recommendations, explain dishes, and ensure a memorable dining experience.
- Stay updated on emerging trends in Japanese cuisine and incorporate innovative ideas into the menu.
Qualifications
- Minimum 3+ years of experience as a Sushi Chef in a high-end restaurant, resort, or hotel.
- Proven expertise in knife skills, fish filleting, and rice preparation for sushi and sashimi.
- Deep knowledge of traditional and contemporary Japanese culinary techniques.
- Strong understanding of food safety, sanitation, and HACCP standards.
- Excellent communication and teamwork skills to collaborate with a multicultural team.
- Creative mindset with the ability to design visually appealing and delicious sushi presentations.
- Ability to work in a fast-paced environment while maintaining attention to detail.
- Fluency in English; knowledge of Japanese or Indonesian is a plus.
