Responsibility
- Supervise daily kitchen operations, ensuring compliance with food safety, hygiene, and quality standards.
- Lead and mentor kitchen staff, including chefs, cooks, and assistants, to maintain high productivity and morale.
- Coordinate with the head chef to plan menus, portion control, and special dietary requests for guests.
- Monitor inventory levels and place orders for supplies, minimizing waste while ensuring availability.
- Enforce SOPs for food preparation, storage, and presentation to uphold brand consistency.
- Resolve operational issues promptly, from equipment malfunctions to staffing shortages.
- Conduct regular training on new recipes, techniques, and safety protocols.
- Assist in cost control by tracking expenses, reducing food waste, and optimizing resource use.
Qualifications
- Proven experience (2+ years) in a supervisory role within a high-volume kitchen, hotel, or resort.
- Culinary diploma or degree (or equivalent experience) with a deep understanding of international cuisines.
- Strong leadership skills with the ability to manage, motivate, and develop a diverse team.
- Excellent organizational abilities to handle multiple tasks in a fast-paced environment.
- Knowledge of HACCP, food safety regulations, and local health codes.
- Fluency in English (written and spoken); additional languages (e.g., Indonesian, Tagalog) are a plus.
