Responsibility

  • Develop and refine new recipes, flavors, and menu items that align with Oti Fried Chicken’s brand identity and market trends.
  • Conduct thorough research on food trends, ingredients, and cooking techniques to stay ahead of industry innovations.
  • Collaborate with procurement teams to source high-quality, cost-effective ingredients while maintaining consistency and taste.
  • Lead sensory evaluations and taste tests to ensure new products meet company standards and customer expectations.
  • Document and standardize recipes, including precise measurements, cooking methods, and presentation guidelines.
  • Work closely with kitchen and operations teams to ensure seamless integration of new menu items into production.
  • Monitor competitor offerings and consumer feedback to identify opportunities for menu improvement and differentiation.
  • Ensure compliance with food safety, hygiene, and regulatory standards in all R&D processes.

Qualifications

  • Proven experience (3+ years) as an R&D Chef, Product Development Chef, or similar role in the hospitality or food manufacturing industry.
  • Culinary degree or equivalent certification from a recognized institution.
  • Strong knowledge of Indonesian and international cuisines, with a focus on fried chicken, fast food, or QSR (Quick Service Restaurant) products.
  • Exceptional palate and ability to balance flavors, textures, and visual appeal in new dishes.
  • Experience with food cost analysis, scaling recipes, and working within budget constraints.
  • Proficiency in food safety standards (HACCP, ISO) and local health regulations.
  • Excellent communication and teamwork skills to collaborate with cross-functional teams.
  • Creative, detail-oriented, and passionate about culinary innovation.
