Responsibility
- Lead and manage all kitchen operations, including meal preparation, plating, and service for passengers and crew.
- Develop and execute high-quality, diverse menus that cater to international palates while adhering to dietary restrictions and preferences.
- Ensure strict compliance with maritime food safety, hygiene, and HACCP standards.
- Oversee inventory management, including food ordering, storage, and cost control to minimize waste.
- Train, mentor, and supervise a multicultural culinary team, fostering a collaborative and efficient work environment.
- Coordinate with vessel management to align culinary services with passenger expectations and operational schedules.
- Maintain up-to-date knowledge of global culinary trends and incorporate innovative dishes into the menu.
- Handle emergency situations, including medical dietary needs and supply shortages, with professionalism and adaptability.
Qualifications
- Minimum 5+ years of experience as a Head Chef or Executive Chef, preferably in luxury hospitality, cruise ships, or high-end restaurants.
- Proven expertise in international cuisine, with a strong background in fine dining and large-scale food service.
- Valid STCW certification (Safety Training for Seafarers) and maritime medical certificate (ENG1 or equivalent).
- Excellent leadership, communication, and team management skills in a multicultural setting.
- Fluency in English (written and spoken); additional languages are a plus.
- Strong knowledge of food safety regulations (e.g., HACCP, ISO 22000) and maritime industry standards.
- Ability to work long hours, adapt to shifting schedules, and thrive in a fast-paced, high-pressure environment.
- Willingness to travel internationally and commit to contract-based sea voyages (typically 4-6 months).
