Responsibility

  • Lead and mentor a team of bakers, ensuring adherence to Chroma Hospitality’s standards, recipes, and food safety protocols.
  • Develop and refine bakery menus, introducing innovative, high-quality products that align with brand identity and local tastes.
  • Oversee daily production, including bread, pastries, desserts, and special orders, while maintaining cost control and minimizing waste.
  • Collaborate with the culinary and F&B teams to integrate bakery items into restaurant menus and special events.
  • Source and manage relationships with suppliers to ensure premium ingredients are consistently available.
  • Implement and enforce hygiene, sanitation, and HACCP standards in all bakery operations.
  • Monitor inventory levels, place orders, and optimize stock rotation to reduce spoilage.
  • Train staff on new techniques, equipment, and recipes to uphold excellence in every batch.

Qualifications

  • Minimum 5 years of experience as a Head Baker, Pastry Chef, or in a senior bakery leadership role within hospitality, fine dining, or luxury resorts.
  • Proven expertise in artisan bread-making, viennoiserie, and pastry arts, with a portfolio of creative, high-end products.
  • Strong knowledge of food safety regulations (HACCP, ISO 22000) and bakery-specific compliance standards.
  • Exceptional leadership and team management skills, with the ability to inspire and develop talent.
  • Degree or certification in Culinary Arts, Bakery & Pastry Arts, or equivalent experience.
  • Fluency in English; proficiency in Indonesian (Bahasa) is a plus.
  • Ability to work flexible hours, including early mornings, weekends, and holidays, to meet production demands.
  • Passion for sustainability and locally sourced ingredients, with experience in cost-effective menu engineering.
