Responsibility
- Prepare and perform live hand-pulled noodle (Lamian) demonstrations for guests, ensuring consistency in texture, thickness, and presentation.
- Collaborate with the kitchen team to integrate Lamian noodles into signature dishes, maintaining authentic flavors and techniques.
- Manage ingredient preparation, including dough mixing, resting, and portioning, adhering to traditional recipes and hygiene standards.
- Engage with customers to explain the Lamian-making process, enhancing their dining experience with storytelling and culinary insights.
- Maintain a clean, organized, and efficient workstation, including proper storage of tools and ingredients.
- Train and mentor junior staff on Lamian techniques, ensuring knowledge transfer and team skill development.
- Monitor inventory levels of noodle-making supplies and coordinate with procurement to restock as needed.
- Adhere to food safety, sanitation, and workplace safety regulations at all times.
Qualifications
- Minimum 3 years of experience as a Lamian Chef or in a similar hand-pulled noodle specialist role.
- Proven ability to perform live noodle-pulling demonstrations with precision and showmanship.
- Deep understanding of dough consistency, fermentation, and traditional Lamian techniques.
- Strong teamwork and communication skills, with the ability to work in a multicultural environment.
- Certification in food safety and hygiene (e.g., HACCP) is a plus.
- Physical stamina to stand for extended periods and perform repetitive motions with dexterity.
- Passion for Chinese cuisine and a commitment to preserving culinary traditions.
- Fluency in English; knowledge of Mandarin or Indonesian is advantageous.
