Responsibility
- Prepare and present high-quality sushi dishes, including nigiri, sashimi, maki, and specialty rolls, adhering to traditional techniques and modern innovations.
- Ensure all ingredients are fresh, properly stored, and handled in compliance with food safety and hygiene standards.
- Collaborate with kitchen staff to maintain efficient workflow, minimize waste, and uphold consistency in portion sizes and presentation.
- Develop and refine sushi menus, incorporating seasonal ingredients and customer preferences to enhance dining experiences.
- Train and mentor junior chefs or kitchen assistants in sushi preparation techniques and kitchen protocols.
- Monitor inventory levels of seafood, rice, nori, and other sushi ingredients, and coordinate with suppliers to ensure timely restocking.
- Engage with customers to explain sushi offerings, provide recommendations, and gather feedback to improve service quality.
- Maintain a clean, organized, and sanitary workspace, adhering to HACCP and local health regulations.
Qualifications
- Minimum of 3 years of professional experience as a Sushi Chef or Sushi Maker in a high-volume restaurant, hotel, or sushi bar.
- Proficient in traditional Japanese sushi techniques, including knife skills, rice preparation, and fish filleting.
- Strong knowledge of sushi ingredients, including seasonal fish, seafood, and specialty items like uni, toro, and eel.
- Experience working in fast-paced, customer-facing environments with a focus on quality and presentation.
- Ability to work flexible hours, including evenings, weekends, and holidays, as required by the business.
- Certification in food safety and hygiene (e.g., HACCP, ServSafe, or equivalent) is a plus.
- Creative mindset with a willingness to experiment with fusion sushi and modern culinary trends.
- Excellent communication skills in English; additional languages (e.g., Japanese, Indonesian) are advantageous.
