Responsibility
- Develop and execute high-quality pastry, dessert, and baked goods menus aligned with seasonal ingredients and guest preferences.
- Ensure consistency in taste, presentation, and portion control across all pastry offerings.
- Collaborate with the culinary team to integrate healthy, locally sourced ingredients into dessert creations.
- Oversee inventory management, cost control, and supplier negotiations for pastry-related ingredients and equipment.
- Maintain strict hygiene and food safety standards in compliance with local and international regulations.
- Train, mentor, and supervise junior pastry staff to uphold service and quality standards.
- Innovate new recipes and techniques to keep the menu fresh and competitive in Bali’s luxury hospitality market.
- Coordinate with the F&B team to align pastry offerings with special events, promotions, and themed dining experiences.
Qualifications
- Minimum 3 years of experience as a Pastry Chef or in a similar role within high-end hotels, resorts, or fine-dining restaurants.
- Formal culinary education (e.g., diploma in pastry arts) or equivalent professional training.
- Proven expertise in classical and contemporary pastry techniques, including chocolate work, sugar art, and plated desserts.
- Strong knowledge of food safety, HACCP, and kitchen sanitation practices.
- Creative mindset with a portfolio of original dessert concepts or menu developments.
- Excellent leadership and team management skills to inspire and guide a pastry team.
- Fluency in English; proficiency in Indonesian (Bahasa) is a plus.
- Ability to work flexible hours, including weekends and holidays, in a high-pressure environment.
