As the Chief Steward, you will oversee all back-of-house steward operations, ensuring seamless coordination between kitchen, service, and housekeeping teams. Responsibility
- Lead and supervise the steward team, ensuring efficient and high-quality service in all F&B outlets and banquets.
- Oversee the cleaning, maintenance, and organization of all kitchen equipment, china, glassware, and silverware.
- Develop and implement standard operating procedures (SOPs) for steward operations to enhance productivity and hygiene.
- Coordinate with the Executive Chef and F&B Manager to ensure seamless service during peak hours and special events.
- Monitor inventory levels of all steward supplies and place orders as needed to avoid shortages.
- Train, mentor, and evaluate steward staff, fostering a culture of excellence and continuous improvement.
- Ensure compliance with health, safety, and sanitation regulations, including HACCP standards.
- Manage waste disposal and recycling programs to promote sustainability within the resort.
Qualifications
- Minimum 5 years of experience in steward operations within a luxury hotel or resort, with at least 2 years in a leadership role.
- Proven ability to manage large teams in a high-volume, fast-paced environment.
- Strong knowledge of hygiene standards, food safety regulations, and best practices in steward management.
- Excellent communication and interpersonal skills to liaise with multiple departments.
- Hands-on experience with inventory management, cost control, and budgeting for steward operations.
- Certification in food safety (e.g., HACCP) is a strong advantage.
- Fluency in English; additional languages (e.g., Indonesian, Mandarin) are a plus.
- Flexibility to work shifts, including evenings, weekends, and holidays, as required.
