Responsibility
- Lead and manage a specific culinary station (e.g., sauces, pastry, grill, garde manger) with precision and efficiency.
- Prepare, cook, and present high-quality dishes according to standardized recipes and plating guidelines.
- Monitor inventory levels, assist in ordering supplies, and ensure minimal waste while maintaining cost control.
- Train, mentor, and supervise junior kitchen staff, including commis chefs and apprentices, to uphold kitchen standards.
- Collaborate with the Sous Chef and Executive Chef to develop seasonal menus and special dishes.
- Maintain impeccable hygiene and sanitation standards in compliance with HACCP and local food safety regulations.
- Assist in daily mise en place preparation and ensure all ingredients are fresh and properly stored.
- Step in to support other stations during peak service times to ensure smooth kitchen operations.
Qualifications
- Minimum 3+ years of experience as a Chef de Partie or in a similar role in a high-volume kitchen, luxury resort, or fine dining restaurant.
- Culinary diploma or degree from a recognized institution (e.g., Le Cordon Bleu, BCA, or equivalent) is a plus.
- Proven expertise in a specific station (e.g., hot line, pastry, butchery) with a strong understanding of classical and modern techniques.
- Excellent knife skills, time management, and ability to work under pressure in a fast-paced environment.
- Strong leadership and communication skills to effectively manage a team and coordinate with other departments.
- Familiarity with international cuisines and the ability to adapt to diverse culinary styles.
- Knowledge of food cost control, portioning, and inventory management.
- Fluency in English; additional languages (e.g., Indonesian, Mandarin) are advantageous.
