Responsibility

  • Prepare and organize mise en place for all dishes in your assigned section, ensuring consistency and efficiency.
  • Oversee the production of high-quality food items during service, adhering to standardized recipes and presentation guidelines.
  • Monitor inventory levels and assist in ordering supplies to maintain optimal stock for your section.
  • Train, mentor, and supervise junior kitchen staff, fostering a collaborative and high-performance team culture.
  • Ensure strict compliance with food safety, hygiene, and sanitation standards in accordance with local regulations and hotel policies.
  • Collaborate with the Executive Chef and Sous Chefs to develop seasonal menus and special culinary offerings.
  • Maintain a clean, organized, and hazard-free workstation at all times.
  • Participate in daily pre-service briefings and contribute ideas for continuous improvement.

Qualifications

  • Minimum 2-3 years of experience as a Chef De Partie or in a similar role within a high-volume kitchen or luxury hotel.
  • Culinary diploma or degree from a recognized institution; equivalent experience will also be considered.
  • Proven expertise in a specific kitchen section (e.g., sauces, pastry, butchery, or hot line).
  • Strong knowledge of international cuisines, with a focus on Asian or Western culinary techniques.
  • Excellent leadership, communication, and teamwork skills.
  • Ability to work under pressure in a fast-paced environment while maintaining attention to detail.
  • Familiarity with HACCP and other food safety certifications is a plus.
  • Flexibility to work shifts, including evenings, weekends, and public holidays.
