Responsibility

  • Prepare and cook authentic Italian dishes, including pasta, risottos, antipasti, and desserts, adhering to Voco’s high standards of quality and presentation.
  • Lead and supervise a section of the kitchen, ensuring smooth operations during service and maintaining consistency in food preparation.
  • Collaborate with the Head Chef and Sous Chef to develop seasonal menus, incorporating fresh, local ingredients while staying true to Italian culinary traditions.
  • Monitor inventory levels, minimize food waste, and ensure proper storage of ingredients to maintain cost efficiency and sustainability.
  • Maintain a clean, organized, and hygienic kitchen environment in compliance with food safety and sanitation regulations.
  • Train and mentor junior kitchen staff, fostering a culture of teamwork, professionalism, and continuous learning.
  • Assist in plating and garnishing dishes to meet Voco’s aesthetic standards, ensuring every dish is visually appealing and delicious.
  • Stay updated on industry trends, new techniques, and Italian culinary innovations to keep our menu fresh and exciting.

Qualifications

  • Minimum of 3 years of experience as a Chef de Partie or similar role in a high-volume, fine-dining, or hotel kitchen, with a focus on Italian cuisine.
  • Proven expertise in preparing Italian dishes, including pasta-making, sauce preparation, and wood-fired cooking techniques.
  • Strong knowledge of food safety, hygiene, and sanitation standards (e.g., HACCP, local health regulations).
  • Ability to work in a fast-paced environment, manage multiple tasks, and thrive under pressure during peak service hours.
  • Excellent leadership and communication skills, with the ability to train and motivate kitchen staff.
  • Creativity and passion for Italian cuisine, with a willingness to experiment and innovate while respecting traditional flavors.
  • Fluency in English; additional languages (e.g., Italian, Indonesian) are a plus.
  • Diploma or certification in Culinary Arts, Hospitality, or a related field is preferred but not required.
