Responsibility
- Oversee and manage a designated kitchen station (e.g., sauces, pastry, grill, or garde manger) with precision and efficiency.
- Prepare, cook, and present high-quality dishes according to standardized recipes and plating guidelines.
- Ensure strict adherence to food safety, hygiene, and HACCP standards in all kitchen operations.
- Collaborate with the Head Chef and Sous Chef to develop seasonal menus and special culinary offerings.
- Monitor inventory levels, assist in stock rotation, and minimize food waste through proper portion control.
- Train, mentor, and supervise junior kitchen staff, fostering a culture of excellence and continuous improvement.
- Maintain a clean, organized, and hazard-free workspace, including equipment and utensils.
- Assist in cost control measures by tracking food expenses and suggesting efficient purchasing strategies.
Qualifications
- Minimum 2–3 years of experience as a Chef de Partie or similar role in a high-volume kitchen, luxury hotel, or fine-dining establishment.
- Culinary diploma or certificate from a recognized institution (e.g., Le Cordon Bleu, BCA, or equivalent).
- Proven expertise in a specific station (e.g., hot kitchen, cold kitchen, or pastry) with a portfolio of creative dishes.
- Strong knowledge of international cuisines, cooking techniques, and ingredient pairings.
- Excellent knife skills, time management, and ability to work in a fast-paced, high-pressure environment.
- Familiarity with food safety regulations (e.g., ISO 22000, local health codes) and allergen awareness.
- Fluent in English; additional languages (e.g., Indonesian, French) are a plus.
- Flexibility to work shifts, weekends, and holidays as required by the hospitality industry.
