Responsibility
- Oversee daily kitchen operations and food production for the Wu Xing restaurant, ensuring the highest standards of authentic Chinese cuisine.
- Manage, mentor, and train kitchen staff to maintain consistency in recipe execution and plating.
- Implement and maintain strict food safety, sanitation, and HACCP protocols across all culinary stations.
- Assist the Executive Chef in menu development, seasonal adjustments, and inventory cost management.
- Monitor food quality and presentation to exceed guest expectations and maintain brand reputation.
- Coordinate with the procurement team to source the finest local and imported ingredients.
- Manage kitchen scheduling and labor costs to ensure operational efficiency.
- Foster a positive and collaborative kitchen culture that aligns with Marriott’s core values.
Qualifications
- Minimum of 5 years of culinary experience in high-end Chinese restaurants, with at least 2 years in a leadership role.
- In-depth knowledge of various Chinese regional cuisines, particularly Cantonese or Szechuan techniques.
- Proven track record in luxury hotel environments or reputable fine-dining establishments.
- Strong understanding of kitchen financial management, including food cost and labor control.
- Exceptional leadership and communication skills, with the ability to manage a diverse team.
- Relevant culinary degree or professional certification from a recognized institution.
- Fluency in English; proficiency in Mandarin or other Chinese dialects is a significant advantage.
- Flexibility to work various shifts, including weekends and holidays.
