Responsibility
- Prepare and cook authentic Japanese dishes, including sushi, sashimi, tempura, ramen, and teppanyaki, with consistent quality and presentation.
- Follow traditional recipes while incorporating creative twists to enhance flavor and visual appeal.
- Ensure strict adherence to food safety, hygiene, and sanitation standards in all kitchen operations.
- Manage ingredient inventory, including fresh seafood, meats, and specialty Japanese ingredients, to minimize waste and maintain cost efficiency.
- Collaborate with the kitchen team to maintain smooth workflow during peak service hours.
- Train and mentor junior staff on Japanese cooking techniques, knife skills, and plating standards.
- Assist in menu development, suggesting seasonal or innovative dishes to attract and retain customers.
- Monitor and maintain kitchen equipment, ensuring all tools are clean, functional, and ready for use.
Qualifications
- Proven experience (2+ years) as a Japanese Cuisine Chef or in a similar role, preferably in a high-volume restaurant or hotel.
- Deep knowledge of traditional Japanese cooking methods, ingredients, and flavor profiles.
- Exceptional knife skills and ability to prepare dishes with precision and speed.
- Strong understanding of food safety regulations, HACCP, and proper food handling procedures.
- Ability to work in a fast-paced environment while maintaining composure and attention to detail.
- Excellent teamwork and communication skills, with the ability to lead and inspire kitchen staff.
- Creativity and passion for culinary arts, with a willingness to experiment and refine recipes.
- Fluency in English; knowledge of Japanese or Indonesian is a plus.
