Responsibility
- Assist the Chief Baker in overseeing daily bakery operations, including production planning, inventory management, and quality control.
- Lead and mentor junior bakers and kitchen staff, ensuring adherence to recipes, techniques, and hygiene standards.
- Prepare and bake a variety of artisan bread, pastries, cakes, and desserts according to established recipes and customer specifications.
- Monitor and maintain equipment, ensuring all baking tools and machinery are in optimal working condition.
- Implement and enforce strict food safety and sanitation protocols to comply with local and international standards.
- Collaborate with the team to develop new recipes and seasonal specialties, incorporating local ingredients and innovative techniques.
- Manage inventory of baking supplies, placing orders as needed and minimizing waste through efficient usage.
- Participate in staff training programs to enhance team skills and maintain consistency in product quality.
Qualifications
- Minimum of 5 years of professional baking experience, with at least 2 years in a supervisory or senior role.
- Proven expertise in artisan baking techniques, including sourdough, laminated dough, and pastry decoration.
- Strong knowledge of food safety regulations, HACCP, and hygiene practices in a commercial bakery setting.
- Ability to read, interpret, and scale recipes accurately, with a keen eye for detail and consistency.
- Excellent leadership and communication skills, with the ability to train and motivate a diverse team.
- Physical stamina to work in a fast-paced environment, including early mornings, weekends, and holidays as required.
