Responsibility
- Lead and mentor a team of R&D specialists in developing new bakery products, from concept to commercialization.
- Oversee the formulation, testing, and optimization of recipes to ensure consistency, quality, and scalability.
- Collaborate with cross-functional teams (Production, Quality Assurance, Marketing) to align R&D initiatives with business goals.
- Stay ahead of industry trends, consumer preferences, and emerging technologies to drive innovation.
- Conduct sensory evaluations, shelf-life studies, and cost analysis to refine product offerings.
- Ensure compliance with food safety regulations, HACCP, and international quality standards.
- Manage R&D budgets, timelines, and resource allocation for multiple projects.
- Document and present research findings, prototypes, and recommendations to senior management.
Qualifications
- Bachelor’s or Master’s degree in Food Science, Food Technology, Culinary Arts, or a related field.
- Minimum 5 years of experience in R&D within the food/bakery industry, with at least 2 years in a supervisory role.
- Proven track record of successful product development and commercialization.
- Strong knowledge of bakery ingredients, processing techniques, and quality control.
- Excellent leadership, project management, and problem-solving skills.
- Proficiency in food safety standards (HACCP, ISO, FDA) and laboratory protocols.
- Fluency in English; knowledge of Indonesian or Japanese is a plus.
- Ability to work in a fast-paced, collaborative environment with a hands-on approach.
