As part of our creative team, you’ll collaborate with chefs, food scientists, and hospitality experts to develop seasonal menus, refine recipes, and ensure consistency across our outlets. Responsibility
- Design and develop new recipes, menus, and culinary concepts aligned with brand identity and market trends.
- Conduct ingredient research, supplier evaluations, and cost analysis to ensure high-quality, sustainable sourcing.
- Collaborate with kitchen teams to standardize recipes, portion controls, and plating techniques for consistency.
- Lead sensory evaluations, taste tests, and iterative improvements to refine dishes before launch.
- Monitor food trends, competitor offerings, and customer feedback to inform menu innovation.
- Optimize production processes to balance creativity with operational efficiency and cost-effectiveness.
- Document all R&D activities, including recipes, nutritional data, and scaling guidelines for kitchen teams.
- Train and mentor kitchen staff on new techniques, ingredients, and quality standards.
Qualifications
- Minimum 5 years of experience in professional kitchens, with at least 2 years in R&D, menu development, or fine dining.
- Culinary degree or equivalent certification from a recognized institution (e.g., culinary school, hospitality academy).
- Deep knowledge of Indonesian cuisine, with expertise in modern cooking techniques and global flavor profiles.
- Proven track record of creating innovative, commercially successful dishes or menus.
- Strong sensory evaluation skills and attention to detail in taste, texture, and presentation.
- Proficiency in food costing, inventory management, and supplier negotiations.
- Excellent communication and teamwork skills to collaborate with cross-functional teams.
- Fluency in English; Indonesian language skills are a plus.
