In this role, you will be responsible for the precise preparation, cutting, and portioning of premium meat cuts, ensuring our guests enjoy the highest standards of flavor and texture characteristic of authentic Korean cuisine. You will work in a fast-paced, professional kitchen environment, collaborating closely with our culinary team to maintain quality control and uphold food safety standards. Responsibility

  • Prepare and cut various cuts of meat according to Korean BBQ standards and restaurant specifications.
  • Ensure proper storage, handling, and rotation of all meat products to maintain maximum freshness.
  • Maintain high levels of hygiene and sanitation in the butchery area, adhering strictly to HACCP guidelines.
  • Monitor inventory levels and coordinate with the kitchen manager for ingredient ordering.
  • Operate and maintain meat processing equipment, including band saws, grinders, and slicers, with strict adherence to safety protocols.
  • Assist the culinary team during peak service hours to ensure efficient meat preparation and plating.
  • Conduct regular quality checks to ensure meat consistency, marbling, and freshness.

Qualifications

  • Proven experience as a Butcher or meat cutter, preferably within a restaurant or hotel setting.
  • Strong knowledge of different meat cuts, specifically those utilized in Korean BBQ.
  • Excellent knife skills and physical stamina to handle extended periods of standing and lifting.
  • Deep understanding of food safety, hygiene regulations, and cold chain management.
  • Ability to work under pressure and thrive in a fast-paced kitchen environment.
  • Disciplined, reliable, and able to work flexible shifts including weekends and holidays.
  • Certification in food handling or culinary arts is considered a strong advantage.
