Responsibility
- Prepare and present high-quality pastries, desserts, and baked goods according to established recipes and standards.
- Assist the Executive Pastry Chef in menu development, cost control, and inventory management for the pastry section.
- Ensure all pastry items are consistently produced to meet quality, portion, and presentation specifications.
- Maintain a clean, organized, and hygienic workspace in compliance with food safety and HACCP standards.
- Train and supervise junior pastry staff, providing guidance on techniques, plating, and efficiency.
- Monitor stock levels of ingredients and supplies, placing orders as needed to avoid shortages.
- Collaborate with the culinary team to integrate pastry elements into special events, banquets, and themed menus.
- Stay updated on industry trends, new techniques, and seasonal ingredients to innovate and refine offerings.
Qualifications
- Minimum 3 years of experience as a Pastry Chef de Partie or similar role in a high-volume hotel, resort, or fine-dining restaurant.
- Formal culinary education (e.g., diploma in pastry arts) or equivalent professional training.
- Strong knowledge of classical and modern pastry techniques, including chocolate work, sugar art, and plated desserts.
- Proven ability to work in a fast-paced environment while maintaining attention to detail and consistency.
- Excellent teamwork and communication skills, with the ability to lead and mentor junior staff.
- Familiarity with food costing, portion control, and inventory management systems.
- Creative mindset with a passion for developing new recipes and improving existing ones.
- Fluency in English; additional languages (e.g., Indonesian, French) are a plus.
