Responsibility
- Prepare and cook authentic Japanese dishes, including sushi, sashimi, tempura, ramen, and teppanyaki, adhering to traditional recipes and presentation standards.
- Oversee kitchen operations, including ingredient sourcing, inventory management, and food cost control to ensure profitability and quality.
- Collaborate with the restaurant management team to develop seasonal menus and special promotions that align with customer preferences and market trends.
- Maintain strict hygiene and food safety standards in compliance with local regulations and company policies.
- Train, mentor, and supervise junior kitchen staff, fostering a culture of excellence, teamwork, and continuous learning.
- Monitor food quality and consistency, conducting regular taste tests and adjusting recipes as needed to meet high standards.
- Assist in managing supplier relationships, negotiating contracts, and ensuring the timely delivery of fresh, high-quality ingredients.
- Participate in staff meetings and contribute innovative ideas to enhance the dining experience and operational efficiency.
Qualifications
- Minimum 3 years of experience as a Japanese Cuisine Chef or in a similar role within a high-end restaurant or hotel.
- Proven expertise in preparing a wide range of Japanese dishes, with a strong understanding of traditional techniques and ingredients.
- Formal culinary training or certification from a recognized institution is a plus.
- Excellent leadership and communication skills, with the ability to manage a team in a fast-paced environment.
- Strong knowledge of food safety, sanitation, and HACCP standards.
- Creative mindset with the ability to innovate and adapt recipes to local tastes while maintaining authenticity.
- Fluency in English is required; knowledge of Japanese or Indonesian is an advantage.
- Ability to work flexible hours, including evenings, weekends, and public holidays, as required by the restaurant’s operating schedule.
