Responsibility
- Oversee and manage daily kitchen and teppanyaki counter operations, ensuring seamless food preparation and service.
- Design, curate, and update seasonal teppanyaki and Japanese fusion menus to delight guests.
- Deliver engaging, high-energy live teppanyaki cooking performances, providing an exceptional interactive dining experience.
- Manage kitchen inventory, food costing, budgeting, and sourcing of premium ingredients from reliable suppliers.
- Supervise, mentor, and schedule the kitchen team, fostering a collaborative and professional work environment.
- Maintain strict compliance with food safety, hygiene, and sanitation regulations (SFA standards).
- Monitor and optimize food waste and kitchen efficiency to maintain profitability.
Qualifications
- Minimum 5 years of culinary experience in high-end Japanese restaurants, with at least 2 years in a Head Chef or Sous Chef role.
- Proven expertise in professional teppanyaki cooking, including advanced knife skills and live culinary showmanship.
- Strong knowledge of Japanese fusion cuisine, ingredient pairing, and modern presentation techniques.
- Excellent leadership, communication, and interpersonal skills to engage directly with guests at the teppanyaki counter.
- Strong understanding of kitchen management, inventory control, and food costing principles.
- Relevant culinary degree or diploma, along with valid food hygiene certification (SFA).
- Ability to work in a fast-paced environment and handle split shifts, weekends, and public holidays.
