Responsibility

  • Lead and supervise daily bakery production, ensuring timely delivery of high-quality bread, pastries, and desserts.
  • Develop and refine recipes to align with customer preferences and seasonal trends while maintaining cost efficiency.
  • Train, mentor, and manage a team of bakers, fostering a culture of excellence, collaboration, and continuous improvement.
  • Monitor inventory levels, place orders for raw materials, and minimize waste through efficient resource management.
  • Enforce strict adherence to food safety, sanitation, and HACCP standards in all production processes.
  • Coordinate with the sales and marketing teams to introduce new products and promotional campaigns.
  • Troubleshoot production issues, optimize workflows, and implement process improvements to enhance productivity.
  • Maintain accurate records of production outputs, costs, and quality control checks.

Qualifications

  • Minimum 5 years of experience as a Head Baker, Pastry Chef, or in a senior bakery production role.
  • Proven expertise in artisan bread baking, pastry techniques, and dessert preparation (e.g., sourdough, laminated dough, cake decorating).
  • Strong leadership and team management skills, with the ability to train and motivate staff.
  • In-depth knowledge of food safety regulations (e.g., HACCP, GMP) and hygiene practices.
  • Excellent organizational and time-management skills to handle multiple priorities in a fast-paced environment.
  • Creative mindset with a passion for innovation in baking trends and product development.
  • Fluency in English and Indonesian (written and verbal) is a plus.
  • Physical stamina to work in a bakery environment, including early mornings, weekends, and holidays.
