Responsibility

  • Prepare and present high-quality cold dishes, including appetizers, salads, charcuterie, and garnishes, adhering to fine dining standards.
  • Assist the Chef de Partie in mise en place, ingredient preparation, and plating to ensure consistency and excellence.
  • Maintain a clean, organized, and hygienic workstation in compliance with food safety and HACCP regulations.
  • Collaborate with the hot kitchen team to ensure seamless service and timely dish delivery.
  • Monitor inventory levels of cold section ingredients and communicate supply needs to the head chef.
  • Follow standardized recipes and portion controls to minimize waste and maintain cost efficiency.
  • Participate in daily pre-service briefings and contribute creative ideas for menu development.
  • Uphold the restaurant’s reputation by delivering visually stunning and flavorful dishes.

Qualifications

  • Minimum 2+ years of experience as a Commis Chef or in a similar cold section role within a fine dining or upscale restaurant.
  • Formal culinary training or certification from a recognized institution is a plus.
  • Proficient in knife skills, food presentation, and cold food preparation techniques.
  • Strong understanding of food safety, sanitation, and kitchen hygiene practices.
  • Ability to work in a fast-paced, high-pressure environment with a team-oriented mindset.
  • Excellent attention to detail and a passion for culinary excellence.
  • Flexibility to work evenings, weekends, and holidays as required by the restaurant’s schedule.
  • Fluency in English; knowledge of Indonesian or other languages is advantageous.
