Responsibility
- Prepare and present high-quality cold dishes, including appetizers, salads, charcuterie, and garnishes, adhering to fine dining standards.
- Assist the Chef de Partie in mise en place, ingredient preparation, and plating to ensure consistency and excellence.
- Maintain a clean, organized, and hygienic workstation in compliance with food safety and HACCP regulations.
- Collaborate with the hot kitchen team to ensure seamless service and timely dish delivery.
- Monitor inventory levels of cold section ingredients and communicate supply needs to the head chef.
- Follow standardized recipes and portion controls to minimize waste and maintain cost efficiency.
- Participate in daily pre-service briefings and contribute creative ideas for menu development.
- Uphold the restaurantâs reputation by delivering visually stunning and flavorful dishes.
Qualifications
- Minimum 2+ years of experience as a Commis Chef or in a similar cold section role within a fine dining or upscale restaurant.
- Formal culinary training or certification from a recognized institution is a plus.
- Proficient in knife skills, food presentation, and cold food preparation techniques.
- Strong understanding of food safety, sanitation, and kitchen hygiene practices.
- Ability to work in a fast-paced, high-pressure environment with a team-oriented mindset.
- Excellent attention to detail and a passion for culinary excellence.
- Flexibility to work evenings, weekends, and holidays as required by the restaurantâs schedule.
- Fluency in English; knowledge of Indonesian or other languages is advantageous.
