Responsibility

  • Accurately break down whole carcasses into primal and sub-primal cuts according to industry standards.
  • Prepare and portion specialty cuts for restaurants, hotels, and retail customers.
  • Maintain strict hygiene and food safety standards in compliance with local regulations.
  • Operate and maintain butchery equipment, including knives, saws, and grinders.
  • Collaborate with chefs and kitchen staff to fulfill custom orders and ensure product consistency.
  • Monitor inventory levels and assist in ordering meat supplies as needed.
  • Provide excellent customer service, including advising on meat selection and preparation techniques.
  • Train and mentor junior butchers or apprentices, if applicable.

Qualifications
