Responsibility

  • Lead and manage all kitchen operations, ensuring consistent quality and service excellence across multiple dining outlets
  • Develop and implement innovative menus that blend international cuisine with authentic Balinese flavors, using locally sourced ingredients
  • Oversee food preparation, presentation, and portion control to maintain the highest culinary standards
  • Train, mentor, and evaluate kitchen staff, fostering a culture of teamwork, creativity, and continuous improvement
  • Ensure strict adherence to food safety, sanitation, and hygiene regulations in compliance with local and international standards
  • Manage kitchen budgets, inventory, and cost control measures to optimize operational efficiency
  • Collaborate with front-of-house teams to deliver exceptional guest experiences and handle special requests
  • Stay current with culinary trends and implement new techniques to keep our offerings fresh and exciting
  • Participate in regular tastings and quality assurance checks to maintain brand consistency

Qualifications

  • Minimum 5 years of professional cooking experience, with at least 2 years in a head cook or sous chef role in a luxury hotel or resort
  • Diploma or degree in Culinary Arts from a recognized institution (or equivalent professional experience)
  • Proven track record of menu development and kitchen management in high-volume establishments
  • Strong knowledge of international cuisines with a passion for Balinese and Indonesian flavors
  • Excellent leadership skills with the ability to motivate and develop kitchen teams
  • Certification in food safety and hygiene (e.g., HACCP, ServSafe) is highly desirable
  • Experience working in tropical climates and with local ingredient sourcing is a plus
  • Fluency in English; additional languages (Bahasa Indonesia, Mandarin, etc.) are advantageous
