Responsibility
- Prepare and steam a variety of dim sum, including dumplings, buns, and rice rolls, adhering to traditional recipes and Shang Palace standards.
- Cook seafood, meats, and vegetables using specialized steaming techniques to preserve flavor, texture, and nutritional value.
- Ensure consistent quality, presentation, and portion control for all steamed dishes.
- Collaborate with the culinary team to develop seasonal menus and special steamed dishes.
- Maintain a clean, organized, and efficient steaming station in compliance with food safety and hygiene standards.
- Monitor inventory levels of steaming ingredients and equipment, and assist in ordering supplies as needed.
- Train and mentor junior kitchen staff on proper steaming methods and Shang Palace’s culinary standards.
- Adhere to all health, safety, and sanitation regulations in the kitchen.
Qualifications
- Minimum 3 years of experience as a Dim Sum Chef or Steamer in a high-end Chinese restaurant or luxury hotel.
- Proven expertise in traditional Chinese steaming techniques, including bamboo steamer use and ingredient preparation.
- Strong knowledge of dim sum varieties, ingredients, and regional Chinese cuisine.
- Ability to work in a fast-paced, high-pressure kitchen environment while maintaining precision and attention to detail.
- Excellent teamwork and communication skills, with the ability to collaborate effectively with colleagues and supervisors.
- Certification in food safety and hygiene (e.g., HACCP) is a plus.
- Fluency in English; knowledge of Mandarin or other Chinese dialects is advantageous.
