Responsibility

  • Lead the preparation, plating, and presentation of high-quality pastries, desserts, and baked goods in alignment with Avli’s modern Greek concept.
  • Manage daily pastry production, ensuring consistency, freshness, and adherence to recipes and standards.
  • Supervise and train junior pastry staff, fostering a culture of excellence and teamwork.
  • Collaborate with the Head Chef and culinary team to develop seasonal dessert menus and special offerings.
  • Monitor inventory levels, place orders for ingredients, and maintain cost control without compromising quality.
  • Ensure compliance with food safety, hygiene, and HACCP standards in all pastry operations.
  • Innovate and refine recipes to enhance flavor profiles and visual appeal, incorporating local and Greek-inspired ingredients.
  • Assist in event planning and execution, including private dining and special occasions, with customized pastry creations.

Qualifications

  • Minimum 3 years of experience as a Chef de Partie Pastry or similar role in a high-end restaurant, hotel, or bakery.
  • Proven expertise in classical and modern pastry techniques, including chocolate work, sugar art, and plated desserts.
  • Strong leadership and communication skills to mentor and manage a team effectively.
  • Creative mindset with a portfolio of original dessert concepts or previous menu contributions.
  • Familiarity with Greek or Mediterranean cuisine is a plus, but not required.
  • Ability to work under pressure in a fast-paced environment while maintaining attention to detail.
  • Certification in food safety and hygiene (e.g., HACCP) is highly desirable.
  • Fluency in English; knowledge of Indonesian or Greek is an advantage.
