Responsibility
- Prepare and cook authentic Filipino dishes according to established recipes and standards, ensuring consistency in taste, texture, and presentation.
- Assist the Sous Chef and Executive Chef in menu planning, recipe development, and kitchen operations to maintain high culinary standards.
- Manage a specific section of the kitchen (e.g., grill, sauté, pastry) and ensure all dishes are prepared and plated efficiently during service.
- Monitor food inventory, minimize waste, and ensure proper storage of ingredients to maintain freshness and quality.
- Adhere to food safety and hygiene regulations, including HACCP standards, to ensure a clean and safe working environment.
- Train and supervise junior kitchen staff, including commis chefs and kitchen assistants, to uphold The Vikings Group’s culinary excellence.
- Collaborate with the front-of-house team to ensure seamless communication and timely delivery of dishes during peak hours.
- Stay updated on culinary trends, particularly in Filipino cuisine, and propose innovative ideas to enhance the menu.
Qualifications
- Minimum of 3 years of experience as a Chef de Partie or similar role in a high-volume kitchen, preferably with expertise in Filipino cuisine.
- Proven ability to work in a fast-paced environment while maintaining attention to detail and quality.
- Strong knowledge of Filipino cooking techniques, ingredients, and traditional recipes.
- Familiarity with international culinary standards and best practices in kitchen management.
- Certification in culinary arts or a related field is a plus.
- Excellent communication and teamwork skills, with the ability to lead and mentor junior staff.
- Ability to work flexible hours, including evenings, weekends, and holidays, as required by the role.
- Valid food handling and safety certification (e.g., HACCP, ServSafe) is highly desirable.
