Responsibility

  • Lead and mentor a team of chefs and kitchen staff, fostering a culture of excellence, creativity, and teamwork.
  • Design and execute authentic French menus, incorporating local ingredients while maintaining classical techniques.
  • Ensure consistent food quality, presentation, and adherence to hygiene and safety standards (HACCP, ISO).
  • Manage kitchen operations, including inventory control, cost analysis, and supplier negotiations to optimize profitability.
  • Collaborate with the F&B team to align culinary offerings with service standards and guest expectations.
  • Train and develop junior chefs, conducting regular performance reviews and skill-building workshops.
  • Stay abreast of global culinary trends and innovate seasonal specials to keep the menu fresh and exciting.
  • Oversee special events, private dining, and catering requests with meticulous attention to detail.

Qualifications

  • Minimum 5 years of experience as a Chef De Cuisine, Head Chef, or Sous Chef in a high-end French or fine-dining restaurant.
  • Formal culinary education (e.g., Le Cordon Bleu, Ecole Hôtelière de Lausanne) or equivalent certification.
  • Proven expertise in classical French techniques, including sauces, pastry, and charcuterie.
  • Strong leadership and communication skills, with the ability to manage a multicultural team.
  • Fluency in English (written and spoken); knowledge of French or Indonesian is a plus.
  • Creative mindset with a passion for menu development and culinary innovation.
