As part of our team, you’ll play a key role in ensuring the highest standards of quality and efficiency in our production process. Your expertise in butchering (90% focus) and cooking (10% focus) will directly impact our daily operations, from precise portioning to marinating and inventory management. Responsibility
- Perform expert butchering of pork and other meats with precision and efficiency (90% of role).
- Prepare and marinate meat according to traditional Balinese recipes and standards.
- Measure and portion ingredients accurately to maintain consistency in flavor and presentation.
- Conduct daily stock inventory (stock opname) to ensure adequate supply and minimize waste.
- Plan and execute daily production targets to meet customer demand.
- Assist in cooking processes (10% of role), including roasting and seasoning adjustments.
- Maintain a clean, organized, and hygienic workspace in compliance with food safety regulations.
- Collaborate with the kitchen team to streamline workflows and improve efficiency.
Qualifications
- Proven experience as a Butcher or Meat Processor, with at least 1-2 years in a high-volume kitchen or production environment.
- Strong knowledge of gramasi (portion control) and marinasi (marinating techniques).
- Ability to handle sharp tools and heavy meat cuts safely and efficiently.
- Basic cooking skills and familiarity with Balinese or Indonesian cuisine (preferred).
- Physical stamina to stand for extended periods and lift heavy items (up to 25 kg).
- Attention to detail and commitment to maintaining food quality and safety standards.
- Team player with excellent communication skills in Indonesian (Bahasa); basic English is a plus.
- Willingness to work flexible hours, including early mornings or weekends, as required.
