Responsibility
- Assist the Chief Baker in overseeing daily bakery operations, including production, quality control, and inventory management.
- Develop and refine pastry and bakery recipes tailored to Waldorf Astoriaâs luxury standards and local tastes.
- Train, mentor, and supervise a team of bakers and pastry chefs to ensure consistency and excellence.
- Collaborate with the culinary and F&B teams to design seasonal menus and special offerings for events and banquets.
- Monitor food costs, minimize waste, and maintain budgetary guidelines without compromising quality.
- Ensure compliance with hygiene, safety, and HACCP standards in all bakery operations.
- Source high-quality ingredients locally and internationally, fostering relationships with trusted suppliers.
- Innovate with presentation and plating techniques to elevate the guest dining experience.
Qualifications
- Minimum 5 years of experience in a high-end bakery or luxury hotel, with at least 2 years in a supervisory role.
- Proven expertise in artisanal bread-making, pastry arts, and chocolate work.
- Strong leadership and team management skills, with the ability to inspire and develop talent.
- Creative mindset with a passion for culinary trends and seasonal ingredients.
- Excellent organizational and time-management skills to handle multiple priorities in a pre-opening environment.
- Fluency in English; additional languages (e.g., Indonesian, French) are a plus.
- Certification in food safety (e.g., HACCP) and knowledge of international bakery standards.
- Flexibility to work early mornings, weekends, and holidays as required.
