Responsibility
- Assist the Executive Chef in planning, preparing, and executing high-quality menus for guests.
- Supervise and mentor kitchen staff, ensuring adherence to food safety, hygiene, and presentation standards.
- Oversee daily kitchen operations, including inventory management, cost control, and supplier coordination.
- Develop and refine recipes, incorporating seasonal ingredients and local flavors to enhance dining experiences.
- Ensure consistent food quality and portion control across all dishes served.
- Collaborate with the front-of-house team to align kitchen operations with service expectations.
- Maintain a clean, organized, and efficient kitchen environment in compliance with health and safety regulations.
- Participate in menu tastings, staff training, and continuous improvement initiatives.
Qualifications
- Minimum of 3-5 years of experience as a Sous Chef or in a similar leadership role in a high-volume kitchen.
- Culinary degree or equivalent certification from a recognized institution.
- Proven expertise in international, Asian, or fusion cuisine, with a passion for innovation.
- Strong leadership and team management skills, with the ability to inspire and develop junior staff.
- Excellent communication and organizational abilities to handle multiple tasks in a fast-paced environment.
- Knowledge of food cost control, inventory management, and HACCP standards.
- Flexibility to work evenings, weekends, and holidays as required by the hospitality industry.
- Familiarity with Balinese or Southeast Asian cuisine is a plus.
