Responsibility
- Oversee bulk food production processes to ensure adherence to food safety standards (HACCP, ISO 22000, local regulations).
- Develop and implement nutritional guidelines for large-scale meal plans, catering to diverse dietary needs.
- Conduct regular quality control audits and hygiene inspections across all kitchen and storage facilities.
- Train and educate staff on sanitation practices, allergen management, and cross-contamination prevention.
- Collaborate with procurement teams to source high-quality, compliant ingredients and suppliers.
- Monitor and document food waste reduction strategies to improve cost efficiency and sustainability.
- Ensure all meal services meet regulatory compliance (e.g., FDA, local health codes) and client-specific requirements.
- Provide nutritional consultations and dietary recommendations for special populations (e.g., medical, corporate, or event-based clients).
Qualifications
- Bachelor’s degree in Nutrition, Dietetics, or related field; licensed/registered Nutritionist-Dietitian.
- Minimum 3 years of experience in food service, catering, or institutional nutrition management.
- In-depth knowledge of food safety regulations (HACCP, GMP, local Indonesian standards).
- Proven ability to design and scale meal plans for large groups (100+ servings/day).
- Strong auditing, training, and compliance documentation skills.
- Excellent communication and leadership abilities to manage cross-functional teams.
- Proficiency in nutritional analysis software (e.g., NutriBase, Cronometer) is a plus.
- Fluency in English; knowledge of Bahasa Indonesia is advantageous.
