Responsibility
- Assist the Executive Chef and Sous Chef in managing the butchery section of the kitchen.
- Prepare, portion, and present high-quality meat cuts according to Waldorf Astoria standards.
- Ensure compliance with food safety, hygiene, and HACCP regulations.
- Collaborate with the culinary team to develop innovative menu items featuring premium meats.
- Maintain inventory levels, monitor stock rotation, and minimize waste.
- Train and mentor junior kitchen staff in butchery techniques and best practices.
- Participate in pre-opening tasks, including kitchen setup, equipment testing, and staff training.
- Uphold Hilton’s brand values of hospitality, excellence, and integrity in all interactions.
Qualifications
- Minimum of 2 years of experience in a butchery or fine dining kitchen role.
- Certification in food safety and hygiene (e.g., HACCP) is preferred.
- Strong knowledge of meat cuts, aging techniques, and portion control.
- Ability to work in a high-pressure, fast-paced environment.
- Excellent communication and teamwork skills.
- Flexibility to work shifts, including weekends and holidays.
- Passion for culinary arts and a commitment to continuous learning.
- Previous experience in a luxury hotel or Michelin-starred restaurant is a plus.
