Responsibility
- Prepare and cook high-quality Italian dishes according to standardized recipes and special orders.
- Assist the Sous Chef and Head Chef in menu development, plating, and presentation to maintain Osteria Mozza’s reputation for excellence.
- Ensure all food items are stored, handled, and prepared in compliance with food safety and hygiene standards (HACCP).
- Monitor inventory levels, assist in ordering supplies, and minimize waste through efficient portion control.
- Collaborate with the front-of-house team to ensure seamless service and timely delivery of dishes.
- Train and mentor junior kitchen staff, fostering a culture of teamwork and continuous improvement.
- Maintain a clean, organized, and hazard-free kitchen environment at all times.
- Participate in daily pre-service briefings and contribute ideas for seasonal menu updates.
Qualifications
- Minimum 3 years of experience as a Chef De Partie or similar role in a fine-dining or high-volume restaurant.
- Proven expertise in Italian cuisine, with a deep understanding of traditional techniques and modern interpretations.
- Culinary degree or certification from a recognized institution is a plus.
- Strong knowledge of food safety regulations, sanitation practices, and allergen awareness.
- Ability to work under pressure in a fast-paced environment while maintaining attention to detail.
- Excellent communication and teamwork skills, with a passion for mentoring others.
- Flexibility to work evenings, weekends, and holidays as required by the restaurant’s operating hours.
- Fluency in English; knowledge of Italian or Indonesian is an advantage.
