Responsibility

  • Lead and manage all kitchen operations, including menu planning, food preparation, and plating, ensuring consistency and excellence in Western cuisine.
  • Oversee inventory, cost control, and budget management to optimize profitability while maintaining high-quality ingredients.
  • Train, mentor, and develop kitchen staff, fostering a culture of creativity, teamwork, and professional growth.
  • Ensure compliance with local and international food safety regulations (SFA, HACCP) and maintain impeccable hygiene standards.
  • Collaborate with the F&B team to design seasonal menus, special promotions, and culinary events that enhance guest experiences.
  • Monitor food trends and innovate recipes to keep offerings fresh, competitive, and aligned with guest preferences.
  • Manage vendor relationships, negotiate contracts, and source premium ingredients to support culinary excellence.
  • Resolve operational challenges efficiently while maintaining a positive and productive kitchen environment.

Qualifications

  • Minimum of 5 years of experience as a Chef De Cuisine, Sous Chef, or similar leadership role in high-end restaurants or luxury resorts.
  • Strong expertise in Western cuisine, with a portfolio showcasing creative and technically refined dishes.
  • Proven ability to manage kitchen budgets, control costs, and drive profitability without compromising quality.
  • Excellent leadership and communication skills, with experience training and motivating diverse culinary teams.
  • Certification in food safety (e.g., HACCP, SFA) and a deep understanding of hygiene and sanitation protocols.
  • Flexibility to work in a fast-paced environment, including evenings, weekends, and holidays as required.
  • Passion for sustainability and locally sourced ingredients, with a commitment to ethical culinary practices.
  • Fluency in English; additional languages (e.g., Indonesian, French) are a plus.
