Responsibility
- Oversee daily bakery operations, including mixing, proofing, baking, and packaging of artisanal breads, pastries, and confections.
- Ensure compliance with food safety regulations (HACCP, GMP) and maintain impeccable hygiene standards in all production areas.
- Lead, train, and motivate a team of bakers and assistants to meet production targets and quality benchmarks.
- Develop and refine recipes to align with local tastes while maintaining the brandâs signature standards.
- Monitor inventory levels of raw materials (flour, yeast, fillings, etc.) and coordinate with procurement to avoid shortages.
- Implement cost-control measures to optimize production efficiency without compromising quality.
- Conduct regular quality checks on finished products and adjust processes as needed.
- Collaborate with sales and marketing teams to introduce seasonal or promotional baked goods.
Qualifications
- Minimum 3 years of experience in bakery production, with at least 1 year in a supervisory role.
- Proven expertise in artisanal baking techniques (e.g., sourdough, laminated dough, cake decoration).
- Strong knowledge of food safety protocols and local health regulations.
- Ability to manage production schedules, prioritize tasks, and work under tight deadlines.
- Excellent leadership and communication skills to mentor team members and resolve operational challenges.
- Physical stamina to stand for extended periods and lift up to 25 kg (e.g., flour sacks, trays).
- Creative mindset with a passion for innovation in baking trends and flavors.
- Fluency in English; knowledge of Indonesian or Balinese is a plus.
